We’re still turning page after page of Ayesha Erkin’s recipe book Date of the Day, featuring 30+ recipes for the humble date. Our dear friend Ayesha has now kindly shared another recipe for you to make at home – timely for breaking fast and after.

METHOD
Step 1
Soak the dates in rose water for 30 minutes.
Step 2
Meanwhile, prepare the pistachio paste. Boil water in a saucepan and place the pistachios in there for 2 minutes, or until the skin seems to peel off easily. Drain and peel the skins off. You can also use store-bought pistachio paste.
Step 3
In a food processor, combine the pistachios, 1 tsp rose water, salt, and water, and blend until a paste forms.
Step 4
Next, dry the dates with a paper towel to remove excess moisture so that the chocolate will stick. Fill each date with the pistachio paste.
Step 5
Dip each date in the white chocolate, making sure it is fully coated. Place on a baking sheet lined with parchment paper.
Step 6
Sprinkle rose petals on top of each date. Chill in the fridge for 30 minutes or until the chocolate is set. Enjoy!
